Serves 12
Ingredients:
- 10 pounds frozen cleaned chitterlings, thawed
- 1 onion, peeled and roughly chopped
- 2 teaspoons kosher salt
- 1 teaspoon crushed red pepper flakes
- 1 clove garlic, peeled and minced (about 1 teaspoon)
- Vinegar, for serving
- Hot pepper sauce, for serving
Directions:
- Rinse the chitterlings in cold running water to remove any impurities, but leaving some fat on. After each chitterling has been cleaned, place and soak in a cold water bath for a few minutes. Drain and repeat until the water is clear, about 2 times more.
- Place the chitterlings in a 6-quart pot and fill with cold water. Bring to a boil, then add the onion and season with salt, red pepper flakes and garlic. Reduce heat to a simmer 3 to 4 hours, depending on desired texture. Serve with spaghetti and/or turnip greens.
- Serve with vinegar and hot sauce.
