Down Home Chitterlings

  1. Rinse the chitterlings in cold running water to remove any impurities, but leaving some fat on. After each chitterling has been cleaned, place and soak in a cold water bath for a few minutes. Drain and repeat until the water is clear, about 2 times more.
  2. Place the chitterlings in a 6-quart pot and fill with cold water. Bring to a boil, then add the onion and season with salt, red pepper flakes and garlic. Reduce heat to a simmer 3 to 4 hours, depending on desired texture. Serve with spaghetti and/or turnip greens.
  3. Serve with vinegar and hot sauce.
